Filipino Arroz Caldo (Chicken Rice Soup)

Arroz Caldo is a ginger flavored rice-chicken soup delicacy where it is traditionally a good food for the sick. But in our case, we always cook Arroz Caldo after we had our prayer and fasting from our church. This type of rice porridge is actually popular in many Asian countries. It can be eaten or served with a side dish.

In some cultures, this kind of congee is eaten primarily as a breakfast food or late supper. Some of our known family friends eat this as a substitute for rice on other meals. I love eating this kind of congee specially when it is cooked deliciously with lots of ingredients in it.
